Just an observation/suggestion - Academy sports had kayaks marked down this weekend. I saw a couple that looked like they may meet your specs but if you're like me you want to see them in person!

I have (actually my son has it now) a Emotion Fisherman Kayak. It is 14' long and 32" wide. It is a sit on top. Extremely stable, only draw back is the weight it weighs 69#. If you know me I am about as graceful as a wounded rhino. And this thing worked fine for me. I am attaching a generic picture of one.

You will probably never find one in the $500 price range, but the Hobie Mirage with its foot propulsion system is the perfect fishing kayak. You can "paddle" with your feet, while your hands are free to fish. Game changer for kayak fishermen.
