I had a good week with the flounder bite so made this from a recipe I found online. Added a little NC flare and Double dang it was awesome!!!

Bake the flounder for 10-15 at 425 (4 nice fat filets)

In a sauce pan add a little olive oil, add 1/2 chopped onion and cook for bout 5 mins- add 2 cloves chopped garlic fresh and cook for about 2 more mins. Add a can of diced tomatoes drained cook for about 5 more mins. Add about 1/4 cup capers-1/4 cup chopped calmata olives- and juice from one lemon-1/4 cup of white wine-3 fresh torn basil leaves- cook for 5 more mins. After it reduces a bit add 1/4 cup or more of grated parmesan cheese. Stir until melted

Serve over long green beans and side with small red potatoes. Pair it up with a good white wine. I like NC Biltmore wines!! You'll smack your momma. I wanted to smack my wife but I needed a dish washer...
