Well needing something to eat last night for dinner and having some fresh wahoo in the fridge I decided to experiment. I pulled out the usual marinade (Italian dressing) poured a little in a baking dish. Put Wahoo pieces in the dish and turned them so they had dressing on both sides. Finally I sprinkled some Old Bay Blackening seasoning on both sides of the fish. Cover with foil and bake on 350 for about 30 minutes, thick slabs take a little longer. I ate that with a little yellow rice and let me tell you, boys it was good.
