Eagle Claw 042's (wide gap offset, not quite a Kahle hook) have been working very well for me after a long struggle to find the right hook.

I like size #1 or #2's.

They hooked and held a 6.75 and three others between 4-5 today for me just fine along with numerous smaller fish.

Matuzso wide Gap Shiner hooks are what I like. In the spring, I use 3 ought and by Sept, I move up to 5 ought as the larger Flounder move in the last week of Aug.
Flounder have a boney mouth and need a good hook set. If fishing Mullet, you nee to let it eat as they are slow to take the Mullet in. If your using a Bunker, it is a softer bait and readily inhaled.

When I'm fishing big baits for big flounder, a 4/0 or even 5/0 Kahle style hook is what I prefer. If I'm trying to catch a couple keepers for dinner, then a 3/0 Kahle works well.

Treble Hooks. Big Treble Hooks! Don't have to worry about losing them as much. Double rig them on a finger mullet and they hang on perfect. You don't even need a net!

I prefer circle hooks. We do a lot of catch and release on my charters up North as our min. size limit was 18.5 inches in NJ. and 20.5 inches in NY. The circles result in fever thrown hooks and fewer deep hooked fish. Flounder take a bait hard and fast and a 5/0 inline non offset circle will bring them to the boat better than most hooks.

Now, if you want big flounder........ bucktail jigs !!!
